Bacon Ranch Pasta Salad

Do you ever have one of those days where you just want crappy carbs? You know the kind I’m talking about..the kind that come out of a box with a seasoning packet…

Yeah, THOSE carbs.

I love those carbs but the problem with them is that you always have to do something to them to make them less crappy and there is never enough. I mean, seriously? What do they do, put 1 cup of pasta in there?? How may people will that feed? Half a person?

Then you go to your pantry and discover you ain’t got a box! Now the world is going to end because seriously, I needs some bacony, ranchy, creamy carbs.

So I made my own, and damn if it wasn’t easy..and better..and oh yeah, there was a hell of a lot more…

1 box (16 oz) dry small pasta shells
1 tomato, diced (optional)
12 oz jar roasted red peppers, diced (no need to get all fancy by roasting your own)
1 lb bacon, cooked and crumbled (more or less depending on your desire of baconess)
1/4 cup grated Parmesan Cheese
1/2 cup sour cream
1 1/2 cup Mayo (I used Hellman’s)
1 packet Spicy Ranch mix (I used Hidden Valley)

Boil pasta according to box. While pasta is cooking, mix together sour cream, mayo and spicy ranch mix and set aside. Start prepping the rest of the ingredients (cook bacon, dice tomato and red pepper, etc etc…). When pasta is done, drain and rinse in COLD water. Mix pasta with ranch mixture, tomatoes, red pepper and Parmesan cheese. Crumble bacon into pasta and fold in. Refrigerate or eat right away.

*This makes a lot so feel free to cut in half
